San Mai Integral Sujihiki
This sujihiki is very long, coming in at 310mm of blade. The core steel is W2 tool steel and the cladding is some wrought iron with a very nice and prevalent grain to it. Seperating the layers is a nickel shim which looks very bright in the etch and prevents carbon loss from the core, ensuring that the blade performs as it should. The bolster is integral and the wrought iron and core are etched right up to the handle. The handle itself is made from african blackwood and is buffed to a high finish. This one will perform great for slicing any kind of fish or meat, cooked or raw.
